This is a simple idea to incorporate the delicious, fresh flavour of The Chilli Project Jalapeño Hot Sauce into your dinners by using it as part of a salad dressing!
This rainbow salad (as named by my children) is a big hit in our household. It is a wonderful accompaniment to any grilled, crumbed or fried meats and if you have leftovers, it is perfect for wrapping in a tortilla with your meat of choice for a quick and easy lunch!
Recipe: Rainbow Salad with Jalapeño Dressing
Ingredients
½ head red or white cabbage, finely shredded
2 carrots, grated
3 spring onions, finely chopped
½ red capsicum, chopped
½ small head broccoli, chopped
125g tin corn kernels
½ tsp salt
1tbsp good quality whole egg mayonnaise
1tbsp The Chilli Project Jalapeño Hot Sauce
Method
1. Combine cabbage, carrots, spring onions, capsicum and broccoli with the salt in a large bowl and mix thoroughly so the salt covers the vegetables evenly. Allow to sit for 15-20 minutes or until the vegetables have broken down a little and liquid has started to gather in the bottom of the bowl.
2. In a separate bowl, mix mayonnaise and Jalapeño sauce until well combined
3. Toss corn and dressing through the vegetables and serve!
