Recipe: Signature Blend Fried Chicken

Serves 4-6


This recipe is a great way to get a little more flavour into your fried chicken. Marinating the meat in milk & hot sauce will keep it moist after frying. A lot of the heat from the chilli is lost in the cooking process, so we recommend serving the chicken with additional hot sauce if you are looking for a fiery result!


2 cups milk
¼ cup Signature Blend Hot Sauce
1-1.5kg chicken pieces of your choice

Flour coating:
2 cups plain flour
1 tsp salt
½ tsp pepper
¼ tsp chilli powder (optional)

Oil for frying


1. Mix milk & hot sauce in a shallow casserole dish, add chicken pieces and coat well. Allow to marinate in the fridge for at least 2 hours (or overnight if possible) turning at least once. It doesn’t matter if the milk curdles!
2. Mix flour & seasoning in a zip lock bag. Drain chicken pieces (discard marinade) and add them to flour mix a few pieces at a time, shaking well to coat.
3. Heat oil in a large pan and shallow fry chicken until well cooked, turning 1-2 times to ensure a golden crispy coating all over the chicken. Drain on a rack over paper towel to ensure the bottom stays crispy and serve!



*Cooking time will vary greatly on the type and size of pieces of chicken used (up to 30 mins for large pieces on the bone!)
*Use the same marinating process for delicious nuggets using chicken breast cut into bite sized chunks and reduce cooking time accordingly.
*You could substitute the sauce for Super Hot Signature Blend or Smokin’ Hot BBQ Sauce if you prefer a hotter marinade
